Lucuma, also known as ‘Gold of the Incas’, is a Peruvian fruit, often used as a natural sweetener and for its energising properties. It makes a great addition to smoothies, baked goods, and ice cream, and contains beta carotene, iron, zinc, vitamin B3, calcium, and protein.

VANILLA AND LUCUMA ALMOND MILK

VANILLA AND LUCUMA ALMOND MILK

  • 1 cup of Raw Almonds
  • 1 teaspoon of Lucuma Powder
  • 3 drops of Vanilla exctract
  • 2-3 Dates
  • 1 Ripe Banana

1. Soak the almonds for around 6 hours or more in filtered water.
2. Drain and rinse the almonds then blend with 3 cups of filtered water until smooth.
3. Strain the mixture through a nutmilk bag or a fine sieve. (Save the pulp to use in crackers or cookies)
4. Return the filtered almond milk to the blender, add the remaining ingredients and blend until smooth.

Tip: If you choose to omit the banana for a thinner milk you might want to add an extra date for a sweeter drink.

LUCUMA ICE CREAM

  • 1 heaping cup of cashews, soaked for a few hours
  • 1/3 cup of Lucuma Powder
  • 1/4 cup of Raw Honey
  • 1/2 teaspoon of Vanilla powder (or 1 tsp vanilla extract)
  • 1/2 cup of Water or Coconut milk (plus extra as needed)
  • Pinch of sea salt
  1. Blend all ingredients together in a blender or food processor. Freeze overnight, or freeze according to your ice cream maker's instructions.
  2. Try not to devour this all at once.
